I haven't done this, but would be interesting. Take oil temp readings in the tank at the exact time they are taken at the oil pump probe in flight. Then also compare these readings from a cowled engine with an open air engine like the aircam in the oil tank.

I agree. It would also be interesting to measure the temp at the oil pump sensor and compare it to the temp of the oil in the line just before entering the pump.
It is possible that the thermal mass of the engine block has a major heating effect on the body of the oil pump.
The oil pump sensor may just be seeing the temp of the block masking the cooler temp of the incoming oil resulting in the measured temperature being closer to the block temp than we might suspect.
